Samosa Chaat is Indian street food at its loudest and best. We crush hot potato samosas, spoon spiced chickpeas over them, then layer whisked yogurt, sweet tamarind chutney and sharp mint chutney, and finish with chaat masala, red onion, tomato and a shower of crisp sev.
Chaat is built on contrast – hot against cold, sweet against sour, crisp against soft. Our version starts with samosas fried to order so the pastry is still shattering when the chutneys hit it, which is the detail most kitchens skip.
