Palak Paneer is the vegetarian plate our regulars order without opening the menu. Fresh spinach is blanched and ground to a smooth green gravy, tempered with garlic, ginger and cumin, then finished with cubes of soft house paneer and a swirl of cream.
The colour comes from technique, not shortcuts. We blanch the spinach briefly and cool it quickly so the green stays bright, then blend it smooth rather than leaving it coarse and dull.
The paneer matters just as much. Ours is fresh and soft rather than rubbery, and it goes in late so it stays tender and takes on the spinach without breaking up. With naan or basmati it is one of the most satisfying vegetarian mains in Northwest Calgary.
Palak paneer works as a main with rice and naan, or as the vegetarian anchor on a shared table beside a tandoori course. A mango lassi alongside is the traditional pairing.
Vegetarian and gluten free. It contains dairy from the paneer and cream, so it is not vegan by default.
