Lamb Roganjosh is Kashmir’s most famous curry and one of the deepest plates on our menu. Lamb is slow-cooked with yogurt, Kashmiri chilli, fennel and dried ginger until the meat gives way and the gravy turns a deep, glossy red.
That red is Kashmiri chilli, not heat. It is a mild, intensely coloured chilli used for its shade and fragrance, which is why roganjosh looks fiery but eats aromatic rather than sharp.
Time does the rest. The lamb cooks slowly in its own yogurt-based gravy until it is tender enough to break with a spoon and the oil separates and rises – the traditional sign the curry is ready.
Order them alongside fish pakora for a mixed appetizer course, then move into a curry with naan. They are also popular as a late-evening plate on our weekend service.
